Yes, It Can! Making Diet Vegetable Soup Taste Good

If you've ever had diet vegetable soup out of a can, you know it can taste pretty bad. It's fairly bland and tasteless, actually, especially if you don't care for canned soup to begin with. The good news is that it doesn't have to be that way. It's easy, too easy, to take a can of diet vegetable soup and make it palatable, even delicious, without adding either calories or salt.

The trick is to spice it up using herbs, spices, and other no-calorie, no-salt seasonings. My favorite of these seasonings is something called lemon pepper; you can get it in the spice section of almost any store, and you can add it to any diet vegetable soup. It goes best with chicken soups, or soups with any white meat or poultry, and also with soups with pasta in them. It has a bright, fresh taste, with plenty of zing, and it doesn't go well with vegetable soups that are heavy on tomatoes (such as, for example, tomato soup; some tomatoes in, say, a mixed vegetable soup are okay) or with red meats, like beef. Use the teeniest sprinkle of paprika and a dash (or two, or more!) of lemon pepper to chicken noodle soup, and see if it doesn't lend it an edge and a taste.

Another good addition to almost any diet vegetable soup is sage, especially if you can get it fresh. Sage is a tonic, and good for the metabolism (and therefore, for weight loss), and sage complements red meat, white meat, and poultry equally well. Unlike lemon pepper, however, which can be added after the soup is heated, sage must be added either when you start warming your soup (if you plan to just heat it up a little) or halfway through (if you plan to bring it to a solid, rolling boil) if you want the flavor thoroughly dispersed into your soup.

Thyme and oregano are excellent additions to tomato soups, Italian soups, and anything with red meat. They can be used with, say, chicken noodle soup, but they won't do much for it. Stick to tomato soups or thick, hearty stews, and you won't go wrong. They also go well with any kind of bean soup.

Hopefully you've realized by now that even diet vegetable soup doesn't have to be bland or boring. Experiment, and enjoy!
