The Recipe for Weight-Loss: Diet Vegetable Soup

If you’re at all familiar with dieting plans, you may have heard of the vegetable soup diet, also known as the cabbage soup diet or Dolly Parton diet. The idea is that you can eat as much of the diet vegetable soup as you desire without gaining any weight, and in fact losing weight over time. This is apparently one of the more popular diets out there and, if you can bear to eat the soup several times a day without consuming any high-calorie foods, people claim you will start to notice a difference after a week.

To make the diet vegetable soup, you will need the following ingredients:

- 1 head cabbage, shredded or chopped
- 2 large onions, chopped
- 16-28 ounces canned tomatoes, chopped
- 2 green peppers
- 4 stalks celery
- 1-2 packages Lipton onion soup mix, or any dry onion soup mix (optional)
- black pepper
- any fresh herb(s) of your choice, chopped
- 6 carrots, sliced
- 1/2 pound green beans, sliced on diagonal
- 1/2 cup balsamic vinegar (optional)

Mix all of the vegetables together into a large pot, pour in as much water as you want and bring to a boil. If you desire to mix in a soup mix for added flavoring, mix it in as well and let it boil until all the veggies become soft. Then stir in the black pepper and chopped herbs, and you’re all set.

Sounds like a boring diet vegetable soup, but it’s actually pretty good – and the best news is you can eat as much as you want, according to people who say the diet works. If you really plan on living off this soup for several weeks to lose weight quickly, you may want to experiment by adding different amounts of certain veggies and leaving others out. You may want to use different soup mixes as well, although make sure any you use are low in calories and fat free.
